How can a 100% crop of a corner of an image show the composition?

A better question is how two different 100% crops of the same region can show different sizes of the same objects.

One of the "100% crops" is scaled.

That alone introduces artifacts, and the fact that you're not even aware of it means you know nothing about your RAW converter. I will happily concede that if you don't know what you're doing, jpeg is better.
