You are off to a great start with your 7100, Keith. I agree with the other posters that shutter speed is important for flying birds--even if you have to increase your iso. Higher ISO's tend to cause more noise (a grainy look). But if you get a post-processing program for your computer, you can take care of that.

I'm curious what focus mode you used. I don't have a 7100, so I don't know your options, but you did a very good job of getting focus on the heron. I assume you were using continuous focus since he was moving.
