What a coincidence!!!

Just yesterday i bought Mac Mini Late 2012 model i7 2.3GHz 4GB RAM and 1TB drive, i still have and use my old Mac Mini Early 2009 model with Core 2 Duo one and i upgraded the Memory there to 8GB and also with 512GB SamPro one, and i use Photoshop CS6 on it with no issue and it is fast with SSD, i work with large files from cameras to give a notice, so i don't think you will have any issue going with Mac Mini over iMac, and i much prefer that way because i still use my Apple Cinema Display which is Matte and better than those new iMac displays,

In what way?

i also have Eizo monitor, so my Mac Mini will beat iMac for display performance.

It depends on what "display performance" and model you are measuring.

I didn't use my new Mac Mini yet, because now i am looking for to buy more memory [16GB to upgrade from 4GB] and SSD, if i may buy new Samsung EVO model to use in my PC build then i will use the one in my old Mac Mini [512GB] in the new one, and i keep one of the two 256GB in that PC for my old Mac Mini, and just yesterday i heard and read about that drive doubler from OWC, it sounds so tempting to have HDD and SSD in Mac Mini, so i am gonna order it and use it to have 2 drives instead of one, unless if i can afford to buy 2 1TB Samsung EVO so one for PC and one for new Mac Mini.

In general, Mac Mini can be upgraded to match or be closer to iMac performances, upgrading the RAM and drive to SSD will give you higher level of Mac Mini, so i hope i will not wait long before i upgrade the RAM+drive in my new Mac Mini.

You can get a Crucial 1TB SSD right now for $600.

- I said Matte, if there is iMac Matte display then i will go with that, but maybe i didn't do any search to find out about that, and many told me they all prefer Matte over gloss for editing/processing, me too, i have 2 Macbook Pro computers one with Matte screen and one newer with glossy screen, i only use that Matte even older for processing, So that what i was comparing for.

- I will always prefer Matte any screen over gloss not Matte one, i did't see or compare all the displays in the world, but few screen gave me a final decision or judgment, MATTE always a winner for processing/editing photos unless some only prefer and work on gloss, if you work 100% on glossy and happy with it good, but i can't talk about everyone, i did judge because of the most i talked with locally or on the net and 99% go with Matte, here where i said Mac Mini with external Matte display will be my choice or winner over iMac gloss screen, i don't know if this Retina is full glossy or semi-glossy but it is only great for viewing photos or videos but not for deep processing, this is my experience, if yours is different it is all fine and no problem.

- I am sure even with 1TB SSD i will still want more space, because i know the larger the size of main OS drive i use the more stuff i will install/download/store on that drive and mostly be lazy to move to another drives regularly, so if 2 drives inside the computer will make my life easier than i keep always connecting external drive to whatever port for transferring between the two, and if there is a way to have 2 drives in Mac Mini then why not.
