I have the 2.3GHz Mini, stock drive and 16GB RAM. I don't experience the problems you had with the demo Mini. The difference between the Mini and the other Macs you tried could be due to a problem with the demo unit and/or the difference in speed between an SSD and mechanical drive.

From my own experience I don't expect much from 4GB RAM beyond running the basics; add Aperture and 4GB simply isn't enough memory. 8GB seems to be enough for many people; I went with 16GB because the difference in cost was around $20 more than 8GB when I purchased RAM from Crucial last fall.

My Mini has surpassed my expectations and I've used a variety of Macs since 1995. It may be the best computer value in 2013. Why not buy it from Apple and give it a shot? You have 14 days to return it for a full refund.
