I don't think the CPU speed differential is worth the extra dollars, but that's personal thing. Instead it would best to get an external drive for your video storage, so you don't start cramming up the internal drive.

Definitely get the best GPU they offer.

As to an external optical drive, why not look at the Blu-Ray options out there? You won't have any drm issues from my experience.

As to ram, you should probably consider buying that from a third party, and save yourself considerably more money towards and external drive.

Also, there's no Retina display for the iMac, although it is a wonderful screen and very good for photography and video with its 2560x1440 resolution.
