Anybody know about JPEG encoding and just how effective it is or is not?

Everybody that knows enough to be dangerous knows that JPEGS having only 8 bits and throwing away data is a very bad thing. I am wondering just how much of a simplification that is and if it discredits the power of the current state of the art of the JPEG encoding process. Does anyone here know about DCTs and JPEG optimization tables and anything else that contributes to JPEG encoding? What I am looking for is an objective, accurate, and realistic assessment of the ability of JPEG encoding to preserve and restore an image captured by a camera.

I sort of raised the question in a couple of other threads and it was totally ignored.
