If you're really that interested, you could rent a test rig. Lensrentals.com will rent you a Canon 7D with a 70-200/2.8 for 4 days for about $100. You could time it for some weekend when you've got a race to shoot.

If you want to know what the state-of-the-art in AF performance is, you could rent an EOS 1D Mark IV with the same lens for about $200.

I didn't check but I'd guess that equivalent Nikons rent for about the same rates.

To do a meaningful test, you should spend some time before getting the camera reading about how to set up the AF system, then shoot with it several times. All cameras and systems take some getting used to.
