Your metaphor has nothing to do with reality.

Lenses project analog images. You need a lot of pixels to get a virtually analog capture of the lens' projection.

If you continue to magnify a piece of digital negative, you only get a finite amount of detail, beyond which, all you will see is the grain structure.

Two articles worth to read. I am sure such 75mp sensor is 75mp as 41mp Nikon cellphone camera sensor has 41mp. However a large portion of pixels from such high density sensors thru an "imperfect" lens are below MTF 50.  Below MTF 20 are called “vanishing resolution” that human eyes virtually cannot see.  As we see in Rick's D800E vs 5D3 test with Zeiss 35/2.0 lens, the difference is pretty small.  DXO measured them both sets tied at 17 mpix that likely capped to MTF 50 (or 30).  D800E has more resolution falls below the cap but above 20% of MTF so we still see a little more details when view at full-size but not that obvious. You can see further more when view at 300% or 400% (that I guess to see down to around MTF 15%).  Your eyes cannot see below 15% MTF where very large portion of Nokia 41mp sensor thru its lens MTF data will fall into.

Even 75MP would be more like a mosaic than an analog image of the lens' projection, for a moderately sharp lens.

Wrong. Before you get to the mosaic, you begin to see the inadequacies of most lenses.
