If you want good video without hassle, get a video camera.  To get the most out of a DSLR, and get films that look like Bloom's or Halibut's, you need to be very careful with everything and have the content of the film and the editing so compelling that you don't notice that the video quality is actually kind of subpar.  That's how those guys make DLSRs look good.  If you look closely at the actual image quality parameters, you'll notice soft details, moire, and compression blocking.
