Metering Modes?

I feel I can take a reasonable picture in reasonable conditions a reasonable amount of times. Sounds reasonable, right? OK, but it seems when the light is patchy, I get areas some too light, some too dark, nothing overwhelming, but I am concious of not giving any real thought to metering. I do quite a lot of outdoor, landscape big gardens, historic homes, & some wildlife, zoos & bird sanctuaries. I have been using spot metering, & was thinking this may be part, or the whole reason for the results I get. Metering is an aspect I really have not studied at all, & feel like I should. Any tutorials worth looking at, bearing in mind I am only a novice. Any help apreciated.
