Nonetheless if I have my apple mirroring turned off, no one can get in?

AirPlay is (mostly) unrelated to the security of your Mac. You're concerned about someone being able to connect to your Mac and see its data. AirPlay goes in the opposite direction. Airplay is a way for your Mac to connect to an AirPlay device, and since you don't have one, seeing an Airplay icon means you have an opportunity to access somebody else's hardware, which is the exact opposite of your fear.

There is only one way that AirPlay could be a security risk to your Mac. If you happened to select the AirPlay icon, whatever is on your Mac would then be played on the AirPlay device, so your Mac screen would be visible on whatever TV is connected to the AirPlay. For example, if you had joined a network on which an AirPlay device is connected to a TV in a nearby conference room, then whatever you are doing on your Mac would be shown on the big screen in that conference room. But they would not be able to get into your files.
