You must be using an unusual definition of "through", one that doesn't include the concept of in one side and out the other. 

You can see through a focus screen, just like you can see through a frosted window.

The focus screen works like a slightly more translucent screen of a rear projection TV.

You are seeing the image on the screen, and when the image from the lens is focused on the screen, and the image turns sharp, is when the camera is in focus.
