how to see arpeture/shutter speed shooting in auto?

when taking pics I use the histogram which is only visible on the LCD for some reason. that's my main logic. I take panoramas and determine exposure by setting aperture then scan the sceneto get a good average shutter speed, then go into manual and enter those settings so the exposure does not change when I scan across the scene taking the pano shots.

lately I have been shooting flowers since that is what is popular in the Hawaii visitors market and that is where I had the prob with the shutter locking up.
