How many people are really going to miss shots with the difference in focus points between these models? How do Canon shooters cope?

Barring niche uses, the new cameras offer little in the way of improved image quality, so in a sense, there is less incentive to spend more on a new body than ever before.

For the money the D5100/D7000 are going for now, a user new to Nikon could get a camera and some serious glass for remarkably little outlay. Good glass is something well worth spending money on instead of a newer body.
