Actually it is a matter of model placement.  All Nikon's  lower end bodies have the 1/200 sync speed.   Since the D600 is Nikon's low end FF body giving it the 1/200 sync speed makes perfect sense.  Besides the difference between a sync speed of 1/250 and 1/200 is not as big as you are makeing it out to be.  You will never notice it the vast majority of the time. The large number of photographers shooting Canon 5D Mark IIs and more recently 5D Mark IIIs don't seem to have any problem with it.
