More DOF/background definition was only a finger flick away if I had wanted it.   If you wanted less than in your example, you'd have to change to a studio or do a lot of post-processing (i.e. shoot a very OOF background and then cut & paste.)   It's the in-camera control of these options that leads so many to choose FF for versatility.

I wouldn't want shallower DoF than that, otherwise I would be dealing with the same issue that would have you select a wider aperture, losing some of the detail on my subject (which wasn't steady and posing for me to begin with but moving).
