I use NEX-3. Even with its older 14 MP sensor, I don't feel the need to be overly aggressive on NR (and sharpness). Sometimes I just prefer a light grain with details. Here are some images, similar subjects to yours:

Jesus those are incredible looking photos. The glass you carry is pretty nice too. Maybe I need to invest in better lenses. Right now all I have is a sal50f14, sigma 70-300, and the nex6 kit lens.
