I think you'd most likely be fine with a D7000, based on your mentioned needs. You could spend the savings on glass or a trip.

But with the D600 and D800:

There were a few things that I felt were handicapped with the 600. The live view implementation sucks on both cameras, but less on the 800. The 800 gives me both AE-L and AF-On buttons. The ISO button placement makes more sense on the 800. The 800 has more MP, but the other issues were more important to me--in my brief experience with the 600, the 24MP were fine. That sensor rocks.

A few pros for the 600: User modes on the top dial, smaller and lighter. Weather sealing is supposedly comparable with the 800. 24MP is more than enough for most needs.
