I think it all comes down to the capabilities of the sensor.  I have both D800 and D600 and I really like the images produced by the D800 more than those produced by the D600.

I have some photos I took at a ghost town using both cameras and before I deleted the ones taken by the D600, I noticed things like the rust patina was more lifelike on the D800 than on the D600.  The D800 has amazing resolving power if you use the lenses recommended in the Nikon D800 Technical Guide.  I try to set my ISO to 100 to take advantage of the 14 stop dynamic range and shoot at f/4 - f/8 (which puts me in the sweet spot of most Nikon lenses).

My D600 has been relegated to backup duty but don't get me wrong, the D600 is a very good camera, it just the D800 is better.

If your mission is to take very sharp images, the D800 has no peer.
