You've got a great kit there and it will serve you well.  I've done Tanzania twice now and am quite familiar with it.

In the Crater and the Serengeti you are confined to existing roads which means you'll often be at the long end of your 100-400mm.  On your 7D though you'll have good flexibility with it.

I took two 5D3s on my last trip (this past February) and used the new 500mm f/4 mk2 for 80% of my wildlife shots.  Still had to crop many of my Serengeti/Crater shots.  Just a fact of life in these parks.  It's actually a good thing if you use the lack of reach in some cases to think about including more of the scenery in the photo and avoiding the urge to frame as tight as possible.

Anyways, most of my wildlife photos on my website are from Tanzania.  I absolutely love it there and I'm sure you'll have a wonderful time!
