.. I was in the region last year for the solar eclipse and also visited the GC (south rim)

I mostly used the EF-S 17-55 and my 70-200  - the longer focal lengths make for nice compression of silhouettes with a more graphical/abstract look plus you also see alot of birds, colorful butterflies i.e. hiking down the trails a bit... depending on how much and long you hike I'd  skip the 300 mm - the 200 plus 1,4x TC would  also work I guess.

What I did not take last time was my panoramic head - which I dearly missed!

You might also consider thinking of multiple exposures for HDR.
