The combination of small sensor and wide angle lens means that DOF is huge, and (likely) not a factor.

Most lenses have a "sweet spot" aperture. It's possible that your lense's sweet spot is at f:2.8. But it's also possible that either AF or the IS messed up the F:2.0 shot. If you really want to know which aperture is faster on your camera, you need to shut off the IS, put the camera on a tripod, enable the delay timer, and shoot some test targets.
