Why do we need a shutter?

My guess is one of you geeks here ought to know the answer to this. I understand the need for it in an analog camera where the film needs to be deprived of light until just the right moment. In a DSLR I guess the mirror and shutter are an all in one mechanism. But say in a mirrorless system, there's nothing in front of the sensor to begin with so why put in a shutter at all?

In a system like SONY's NEX the sensor is already actively capturing the image an feeding it to the processor which in turn feeds it to the screen. So why can't we just tell the processor, here take this image! Is this not the what happens in a smart phone's camera and some point and shoots already?
