well, by the time you get to the 30, you're already shifting your eyes left to right anyway.  I think the main gain in the dual 30s is when one is portrait oriented.  Also, with LR, you can have one screen be the preview pane and the other be the thumbnails.  I can quickly scan through the landscapes and then the portrait oriented shots.   You get a lot more pixels out of 2 1920x1200s versus one 2560x1440 or even 1600.

There are some awkwardnesses around the non rectangular total desktop, however.  A wacom would seem more straightforward with a single screen.
