I just shoot Raw and leave it on Auto, it can easily be dealt with later on if needed.

For me, I find shooting Raw reduces hassle. I use Aperture for post processing, and most of the time it's just a matter of importing, at which point I apply a basic edge sharpen during the import, and then a quick flick through to make any adjustments. The initial process in Aperture does all the Raw conversion, and gives you usable images just as if I'd imported JPEGs, but I have much more flexibility to fix things if needed (i.e. recoverable highlights etc.).

Of course this all depends on your own workflow, and what software you use for processing.
