This approach is pedagogically easier because taking the shot comes first and postprocessing comes later.

I was always thinking that "pedagogically" it is right to teach : "think -> act", not "act -> think"... is photography an exception ? why do you want to teach "act -> think (what to do w/ the results)" first ? just because you want to spare their brains from a little workout ? or because you want to make your money quick and go home.

You are thinking way too linearly. As see it, it mastering photography is an empirical process, where you learn by experience. Further why are you equating shooting with acting and postprocessing with thinking ?  There is action and thinking both in shooting and in postprocessing.
