Would you recommend going for a 70-300mm lens

the 70-300mm lens is designed for a full-frame sensor camera and is bigger (wider, longer, heavier) than the 55-250mm for not much more range.  you may find that losing 15mm on the wide end is more significant that losing 50mm on the long end.  the cheapest canon 70-300 is also about twice the price of the 55-250mm

18-200 lens so as to also have a better wide angle lens and reducing the damage to the sensor whilst changing lenses?

the 18-200 is not noticeably better than your 18-55 at the wide angle.  and while using one lens for many situations is convenient, your camera body was designed for changing lenses.  a second telephoto zoom lens (like the 55-250mm) is typically capable of producing better pictures than a superzoom lens (like the 18-200mm).

good luck.
