What is the maximum ISO you're comfortable shooting (and what camera)?

As high as needed!

I try to keep the ISO as low as possible (off course!), but usually donĀ“t even look at what ISO I am at. What I mean is that when I need to raise the ISO beyond 400 I will shoot in manual with Auto ISO. I set the minimum shutter speed for the subject, desired aperture for DoF, and let the camera pick the ISO. That way I always end up with the lowest possible ISO for the shot.

That said, I usually am "happy" all the way up to 3200....

Here is a (boring!) shot at ISO12800 on a d7000.... some noise treatment was applied:

D7000 1/250 f2.8 ISO12800
