There's no great diif between horse and cow as meat goes.. horse tends to be a bit tougher as they are all muscled up and run and kick/jump everywhere.. horses are nut jobs.

Cows tend to be more sedate and their meat less lean and more tender.

The problem of the meat is less the fact that it was horse and more the fact that it was all covered up and secretive.
