Having backpacked with a variety of cameras carried a variety of ways, I've found two options that work well in both keeping the camera where I'll use the thing on the go and protecting it--a belt case (for compacts) and this chest pack I use for the E-M5. I'll add that to remove my pack, I have to uncllip the top and bottom buckles on one side of the camera pack--it's still well protected and stays with my kit (no chance of leaving it behind after a rest stop).
Leaving the camera out, whether slung over a shoulder or clipped on, is to leave it more vulnerable. I've mostly gotten away with it, but have also had some regrettable incidents that a modest bit of protection would have completely avoided. Dust should be a concern, depending on trail conditions, and sweat is a chronic problem in summer. I mostly hike the Sierra Nevada and even the best trails have rocky stretches, creek crossings, unexpected fields of deadfall, lingering snowfields, washouts, etc. The more fatigued I am, the less I'm paying attention to my stuff--camera included.
But nothing says "dead weight" like a camera shoved deep in the pack, a five-minute dig away from use. Whatever system you settle upon, you'll be happy if it keeps the camera handy where you can grab shots as they arise, as well as experiment on the go. Should you decide on slinging it over your shoulder, at least consider a Zing case, which will fend off light rain and moderate bashing.
Which chestpack have you used for the E-M5?
