To the advice to shoot without filters, in colour, and add effects like sepia toning in PP, add my +1. You can always take the colour out in PP, but you can't put it back if the original is missing this data.

Thank you I guess that makes sense.

I appreciate shooting with the filter/style setting on.

Actually composing in B&W or some other effect is easier than trying to visualize it on  a color screen.  It took years to begin to "see" in B&W during the film era.  Being able to do so in real time on an EVF or LCD is fantastic!
