Bayer filter: why have RGB and not CMY?

That's a good point. One of the comments on the Wikipedia talk page is related: with CMY it's a more complex calculation to demosaic, and noise produces more color aberration. I guess the overall effect would be trading color accuracy for luminance accuracy.
