They key to getting the results that you want is to take the time to modify one of your raw images so that it looks like the JPEG. The JPEG should be what you would consider to be a "normal" image that reflects what you normally take. Then adjust the raw file until it looks like the JPEG using Camera Raw. Once you have the raw file looking "correct" save new camera defaults in Camera Raw. Then, whenever you open a raw image in Camera Raw, those settings will be applied automatically. Of course, they won't be perfect for every situation. But it will give you a starting point that will be much closer to what you want.
