Pardon the OT, but DPR M4/3 Forum posts and replies, my take

I'm a big wary of duck eggs  for omelettes because of their nasty habits and the fact that I like my omelette just a trace runny, which means unfriendly, even outright antagonistic, bacteria can survive the cooking.

Better yet, try megapod eggs from Matupit volcano area, Rabaul. The megapod is a bird about the size of a chicken that lays an egg about twice the size of a chicken egg, and buries it in the warm sand near hot springs to hatch.

You dig them up, reject the usual practice of simply boiling them in the hot springs, and make your omelette, taking care to break them first.

I was pleased to see, Rol, tht you spelt "omelette"  correctly. i am all for simplified spelling but when it comes to designating one of the most delicious and varied dishes known to humankind, then let’s take a little trouble and do it the Fwench way!
