I own a Mark II and 30D.

The Mark II has finer grained more film like noise than the 30D. Possibly for the same reason, its files fall apart more gracefully at high ISO. The Mark II raw files have a bit more exposure latitude too. I suspect that electrical/RF noise is better controlled in the sensor readout circuitry in the Mark II.

Once you get past the weight, poor review screen and different controls the Mark II is better in every other way.
