I need to recommend a beginner's (learner's) camera

I need to recommend a beginners camera to a ...well, beginner. She is the 20 year daughter of a friend and all the clues I have is as follows:

Budget is $1000, maybe a bit more upto 1250- 1350 including the lens.

It should be responsive, fast and it should be a learner's camera.

It must be an interchangeable lens camera

That's all I know. I am not sure if a DSLR will do so I intend to recommend mirrorless options. I think the camera should have enough manual controls for a learner but it does not need to be overcomplicated or overwhelming.And I think a viewfinder should be there.

The first three in my mind are Olympus OM-D EM5, Fujifilm X-E1 and Sony Nex-6

Would you recommend one of these or another? Fujifilm had some software issues with some of their cameras and I am not sure whether X-E1 is good at it. A responsive camera would be really good, also I think a good AF will also help.

I do not have good knowledge of these cameras and looking for ideas to offer one. Thank you in advance.
