DPP question for the Masters :) - Color Temperature

Dear all,
here i am again with unclear things to ask. One of the users here (thank you Anthony) was very kind to suggest me i should start being more friendly to my DPP program since it can do a lot of things (i have a 550 D). So here i am, updating my version and looking at the tutorials. And i stumble on the first unknown. In the tutorial named "Processing Ease" the guy that explains how things work chooses (i saw him at least 2 times choosing this) "Color temperature"
Since i am more than a beginner to this, my question is: Should i always choose "Color Temperature" (it does look nice ) as sort as a default or go for the "shoot settings"? I am asking this because i really dont understand why in the Canon tutorial they specifically chose few times "color temperature" without modifying anything else.
Please bare with me in case this question sounds silly but i am more than new to this.
