Of course, this is only sensor performance, but if IQ is anything like the two Nikons that I have used, with that sharp Zeiss 35 f2 lens, I don't see how the RX1 could ever be a bad choice for your desired use.
I'd probably look at the X100s as well. With the excellent VF and great IQ, it makes a excellent walk-around camera. It won't have the same kind of low-light/high ISO performance of the RX1, but my experience with the original X100 is that IQ is superb, and with the new X-Trans sensor, and PDAF, the upgrade to the already superb hybrid OVF/EVF, X100s is going to be a heck of a camera. And unlike the RX1, it has a built-in VF. Don't know the size difference however between the X100s and RX1. The X100s is an extremely lightweight camera, but if I had to guess I'd say it's ever so slightly larger than an RX1 if size is a priority for you.
But IQ performance wise, it's tough to get much better than the RX1.

All C-AF only mirrorless cameras struggle in low-light to varying degrees. The OP asked specifically if the IQ of the RX1 would be dramatically better than the EM-5. Not about low-light AF. But good try.

Someone else also compared an iPhone to a $ 15,000 Leica and in good light he dared to compare...it was tough
So one buys color purity, IQ, distortion, low light IQ, AF speed, its all a balance, but I gotta tell you inability to excel at low light is the most crippling to most expensive cameras.
FOr example, the AF speed improvement that the new Fuji X100S reports over the X100 and the E-X1 are very exciting developments for Fuji.
