Olympus offers about 4-5 different presets screens both while shooting pictures and while reviewing/playing your pictures back. You can choose which preset displays are activated. Suppose there are some displays you are never using, you can deactivate them with the benefit that you will be able to scroll to the one you want faster with the info button. These preference are in the Custom Menu section named Disp./PC. (cogwheel menu section D if I remember correctly).

True enough, the whole screen can be deactivated but the components of the screen can't be reconfigured, correct? And has anybody found a way to deactivate what I'm guessing is the "default screen" with all the settings?

No you have to take those screens as they are, you can't mix and match their elements, but you can activate or deactivate each of them, keeping the number of them you want.
