I have the joystick on my 5D3 and 7D setup to allow me to immediatly jump to different focus points, without going into a menu, but unless I'm shooting multiple shots with a off center focus point, or really thin DOF, I focus and recompose because it's quicker than fiddling around changing focus points. I more often choose a off center focus point for sports/action pics when using focus tracking, than I do for static shots. That's one of the main advantages of a large number of precision AF point for me personally. For static shots with my 60D, I had no problem with only 9 AF points, but of course all the 60D AF points are cross points.
