Well now to the camera itself.
1) noise - O mama mia!!!. I use iso3200 on a regular basis! On 5Dmk2 it was absolute maximum, on D600 it is totally usable.
Sorry but 5DII ISO 3200 is totally useable as in D600. Not sure what you mean by absolute maximum.
D600 has 1 stop less noise (2/3 stops "measured" and 1/3 "perceived" due to the lack of banding). If you define IQ of 5Dmk2 at iso3200 as "usable" then on D600 iso6400 is usable.
2) DR. double "mama mia!!!". I often shoot in forest or other high contrast scenes. Then I use "fill light" in LR, and 5Dmk2 pulls horrifying noise. On D600 even at "shadows" +100 and "blacks" +100 there is no noise.

3) Af. Cross-points are same or a bit better than those on 5Dmk2. And even though there are only 9 of them, an ability to move the subject from the center is already very helpfull. Other non-cross-points are much better than on 5Dmk2 and I find them usable in a good light (as oppose to totally unusable on 5Dmk2).
Wrong again. In good light other focus points works great in 5DII. 5DII center point is the best ever made.
Well. I disagree here. I would better buy a lottery ticket than use 5Dmk2 outer points.
4) Button layout. Even though I used Canon for like 7 years, I find button-layout on Nikon better than on canon. All necessary functions are accessible without going into menu. The only thing I still like more on Canon - vertical wheel for the index finger.
On the contrary the software menu is very confusing and highly non-intuitive.
I think "perpendicular" menu construction (as on Canon) is in general much better than "parallel" (Nikon, Olympus). But again, on Nikon, I almost never go inside those menus.
This one is personal. I like both system ergonomics. One man's meat is another man's poison.
5) Auto WB and "skin tones". Well that is the second BS, floating in Canon society.
I find WB of Nikon same bad (or same good) as Canons. Difference is that Canon tends to shift to magenta, while Nikon shifts towards yellow. Both need adjustment in LR, and both by the same absolute value.
No it is not BS. Canon WB straight out of the camera is a lot accurate than Nikon. D600 AWB is good. Try D800 and see for yourself. At the end of the day it is not a game changer.
I use D600, not D800. On D600 it is maybe a bit worse: I have 5 rooms at home with different lighting, only in 1 room Canon gives good WB, while Nikon - not so good. But I have to adjust WB in LR anyway.
6) Exposure Metering. That was a relief. As I mentioned, I often shoot high contast scenes, therefore I need to expose on the brightest part, and then pull shadows in Lightroom. Canon 5Dmk2 was totally unpredictable, I need to make at least 3, often 4 shots, to get what I want. With Nikon - one test shot, second shot is what I want.
Also Canon underexpose by 1 stop as soon as ISO reaches 800 and higher.
Another BS.
So, except some strange behaviour of the Tamron 24-70, I am happy that I did the system change. It did cost me some money, but Canon will not make new sensor with low read noise on at least next 4 years.(life cycle of 1D,5D,6D lines). There was a lot of hope on 6D, but the miracle didn't happen.
You sound like you are trying to justify your move. Canon 6D was a great hit for Canon.

I shot with 5DII for three years. Today I'm shooting with D800, 5DIII and D600. Not sure I will keep my D600 due to oil in sensor. My plan was to sell my 5DIII after getting D600 but the oil in D600 is not sitting well with me. It looks like I will continue to shoot with both system
I don't like guys that switch sides then turn around and bash the other system they have used for years. You are new to D600. It is like having a new girl friend. I think you need more time before you take her to the altar.
I've used D600 2.5 month by now. I decided to write this post later on purpose. At the beginning I actually had the opposite opinion.
