Let's talk P7100 "Picture Control"

I know how this feature works on my Nikon DSLRs. It appears that it doesn't work the same on the P7100.
You can say "do a search" and I did. You can say "read the manual" and I just finished doing that. I still have questions.
You go into the menu and see "Custom Picture Control". Why Custom? Then "Edit and Save". Huh? Then you choose "Standard" "Neutral" etc. Then hit "OK" Then "Save As" pops up. "Save As" Custom 1 or Custom 2. Why? Didn't I just choose Standard? Let's leave it as Standard OK Nikon?
Then I get out of all those menus and there's no indication whatsoever of what "Picture Control" I'm in on the LCD.
Help me out. How does this work? Let's say I want to dial up the settings in "Standard" (which is what I have my DSLRs set at). Or, heck, I just want to choose "Vivid". Treat me like a newby, walk me through this process. Do I have to save each tweak as a Custom? There's only two Customs, what if I want to tweak three Picture Controls?
