With this fisheye lens on my DSLR, I do get almost a full 180 degrees. So, how much less would I get if mounted on the E-PL2, then.
No idea, but it would be comparable to 7.5mm "native" lenses - the actual focal length may not be a totally reliable guide for FE lenses anyway.
Also, can you suggest a specific adapter for mounting EF lenses to my PEN? Isn't that rather expensive; as there needs to be electrical connections? But, for the fisheye, would I need the EF adapter? Could I get by with an FD adapter (for use with Canon's manual lenses)?
You need an EF adapter as previously stated. Dumb EF adapter are inexpensive; you don't need the electrical connections at all.
FD is a totally different mount and is not suitable; can only be used with older FD lenses.
Finally, are Canon manual lenses when hooked up to a m4/3rds body, considered good enough lenses for this sort of use? One usually sees Pentax or Olympus legacy lenses a lot more than Canon.
Canon are easily comparable in quality to any other major brand of legacy lens, there are good models and bad ones, and variation between different lenses of the same model.
Unless you have a particular photographic need (ie, extreme telephoto or macro; or FE, or a particular "look") there is little point in using legacy lenses for still photography, but they are fun. Also good for video.
