Nikon D800/D800E configuration

I'm assuming you mean 3D matrix metering.  This mode tells the camera to use the whole frame for metering (or at least most of it).  It produces the best results in most situations, the metering in the D800 is quite good.  It's rare I would switch to one of the other metering modes, this is a setting I rarely touch.
