If you just go full SSD/flash storage then saving the files will be a bit faster than a traditional hard drive or the fusion drive. If you're starting from the ground up, this would be a good choice. If you have a MacPro lying around I'd probably go the route of upgrading that.
It's likely that apple will have a new MacPro system come out towards the end of this year that might be slightly better suited, but for now the iMac is a pretty good machine, I just don't like the screen as much as the NEC PA-271 monitors I have in the studio.
