The OP's problem aside, do you have to keep holding the down the shutter button to AE bracketing?

I'm considering upgrading from the Nikon P300 to the RX100 and rather depend on the fact that I can hit the shutter button once quickly and remove my hand to get AE bracketed exposures that are well aligned without having a tripod handy.

Yes you do, I just tried it.  And as far as stability goes, it is better to keep your finger on the shutter until after the camera has finished shooting: it is more stable and should produce better results.
