Really, that's the question.  As far as I can tell, not having used any of them, the 5D2 is the weakest of the three in terms of features.  The 5D3 and 6D are leaders in high-ISO-low-light work, and in IQ.  The 5D3 also has Canon's most sophisticated and capable AF system, shared with the 1DX but apparently surpassed by the 1DX.  The 5D3 shoots at 6 fps and has a maximum shutter speed of 1/8000, the 6D at 4.5 fps and 1/4000.  The 6D has wi-fi and GPX.  The 5D3 has slightly higher resolution, but doesn't come close to the Nikon D800.  And so; go down the list of features and compare them, compare prices. look at your bidget and desire for lenses, and go from there.
