Using PS Proofing and Proof Setup

It's been a while since I did this and since then rebuilt my computer, so have to reset a bunch of things.

Regarding "View", "Proof Setup", I have added into it my new monitor calibration and my calibrated printer's paper file.

What I forgot was when I select my printer's calibrated paper file (checked marked) and use the Ctrl Y toggle, what does the toggled command represent?  Does this now show what the default monitor view is?  Toggle back and then this is the paper setting?

How do I know what the default monitor view is, so I can get back to the normal editing routine?  In other words, when I toggle Ctrl Y back and forth, what is the default monitor view?

At the top of the screen the picture file ends as "(RGB/8*)" for one selection and "(RGB/8*/Costco 3705 Lus) for the other.  How do I make the "(RGB/8*) be the default (calibrated) monitor?
