Sure they will change, and each RAW converter will introduce their own look/profile, depending not only on the converter, but on the camera and camera settings too.

Yet people should know if the major subsystem of their camera, like JPEG engine, is broken. These are not pixel-peeping issues, the colors and splotches (which are probably the result of failed NR, but maybe not as there are visible even at base ISO) are macro features visible at any size above stamp.

I never liked Nikon colors much, but it seems it got worse recently. Maybe Canon sent a mole into Nikon R&D labs who broke Nikon's JPEG engine.
