The f2.8 zooms become the aps-c equivalent of f/1.8 zooms in FOV/DOF

You do still gain quite a bit using f/2.8 zooms.  At 24-70 2.8 is about what a 16-50 f/1.8 would be on aps-c, if such a zoom could exist.  You basically gain a little over a stop in DOF control with the f/2.8 zooms on FF.

The f/4 zooms from Canon (and now Nikon) would give you just about the exact equivalent of the f/2.8 zooms on aps-c.
